Last night on Healthy Minds Better Lives, Ellen Picton of Healthaspire gave insight on nutrition as we enter the winter months.

Below is a recipe that she shared online so you can make it at home.

Beef & Lentil Cottage Pie

Feed the family for £5 or perfect for freezing into portions.

Ingredients:


1 Tbs oil 
300g minced beef
1/2  tin of cooked green lentils, drained
2 tbsp cornflour
2 beef stock cubes
200ml water

For topping:
3 potatoes, peeled and chopped
1 small swede, peeled and cubed
500g parsnips, peeled and chopped
500g carrots, peeled and chopped
50g cheddar cheese, grated
1 small leek, washed and sliced


Method:

1. Prepare your vegetables, place into a large saucepan and cover with boiling water and ½ tsp of salt.  Bring to the boil and leave to simmer until softened (around 15 – 20 minutes).
2. Heat the oil in a frying pan
3. Add the beef and brown for a few minutes, then add the lentils.
4. Add the cornflour to the beef and lentils and stir evenly to coat the meat.
5. Crumble in the stock cubes.
6. Add the boiling water and stir thoroughly.
7. Turn the heat down low and simmer for 15 minutes.
8. Once the vegetables have softened , mash well and season with salt and pepper and a little butter or milk if you wish.
9. Transfer the meat and lentil mixture to a Pyrex dish and cover with the mash, then sprinkle with the leek and cheese.
10. Finish under a hot grill for a few minutes, until the cheese is melted.
