Tiramisu
How lucky we are to be given another glorious heatwave! The time to indulge in a delicious chilled dessert - a family favourite is Tiramisu - light, creamy, cool and super easy! My recipe this week on Lawrie’s Lifestyle Show 12-3pm
Tiramisu
Ingredients:
Packet of sponge fingers
10 fl onz strong black coffee
8 tablespoons Tia Maria
400g carton custard
250g mascarpone cheese
300g whipping cream
2 tablespoons cocoa powder
Step 1 - mix liquor and coffee in a jug - place half of the sponge fingers in a dish and pour over half the fluid and let soak in for 10 minutes.
Step 2 - in a bowl mix together the custard and the marscapone and spread half the mixture over the fingers.
Step 3 - repeat with remaining fingers and mixture and chill for 2-3 hours or overnight.
Step 4 - lightly whip the cream, spread over the top and dust with the cocoa powder - chill for 1 hour then enjoy!
NB - contains alcohol- use a coffee syrup for an alternative and a decaf coffee substitute if required.
