How did you get into radio?

Hummmmm......tricky one! I had my arm twisted by the station manager - who’s my son! 😂 convincing me that it must be in the blood! 2 years later presenting a Lifestyle Show it was the best idea ever! I love every minute!

One thing people might be surprised to know about you?

When I was 15 I was Carnival Queen attendant in Milford Haven. Terry Wogan was the celebrity who opened it and I met him and had a lovely chat....he gave me a cuddle and kissed my cheek! I felt blessed by the Blarney Stone .....if only I’d known I’d be following in his footsteps 50 years later!

APPLE AND CINNAMON MUFFINS

INGREDIENTS FOR 12 MUFFINS:

· 2 apples variety of your choice – peeled, cored and chopped

· 250g self-raising flour

· 2 tsps baking powder

· 2 tsps cinnamon plus extra for topping

· 125g light soft brown sugar plus extra for topping

· 125mls runny honey

· 60mls runny natural yogurt

· 125ml flavourless vegetable oil

· 60mls natural runny yogurt

· 2 large eggs

· 75g almonds - chopped

METHOD:

Step 1 – preheat oven to 200c/180fan/gas 6 – line a muffin tin with cases

Step 2 – Measure flour, baking powder, cinnamon and half the almonds – chopped into a bowl

Step 3 – whisk together the honey, sugar, yogurt, oil and eggs together in another bowl

Step 3 – combine the ingredients together and fold in the apples – it is a lumpy mixture so do not overbeat.

Step 4 – divide into muffin cases and sprinkle on the remaining nuts, 1 tsp cinnamon and 4 tsps. brown sugar.

Step 5 – bake from approx. 20 mins until risen and golden – leave to cool and enjoy
