Cinnamon Rolls
Ingredients:
For the dough:
344g plain flour
50g white sugar
1/2tsp salt
180ml whole milk
43g unsalted butter
Sachet of instant yeast
1 large egg
For the filling:
43g unsalted softened butter
67g brown sugar
1 tbsp cinnamon
For the frosting:
113g cream cheese
28g butter
80g icing sugar
1 tsp vanilla essence
Method:
Step 1. Put the flour, sugar and salt into a bowl
Step 2. Warm the milk and butter– approx. 1 minute in the microwave to get just warm or approx. 100F if you have a thermometer. and stir in the yeast until melted
Step 3. Add the wet ingredients plus the egg and mix to a soft dough. Knead for 5 minutes then rest for 10 minutes.
Step 4. Roll into a rectangle approx. 14 x 8 inches then spread over the soft butter and sprinkle over the cinnamon and sugar mixture
Step 5. Roll tightly from the long end and cut into 10-12 slices
Step 6. Let them rise until puffy and doubled in a warm place – approx. 1 hour
Step 7. Bake at 190c or equivalent for approx. 20 - 25 minutes until golden
Step 8. Beat the icing ingredients together and spread onto the warm rolls - it will melt and swirl and smell like heaven – enjoy
Tips:
If you’re in a hurry, rise the dough in the oven with just a light on
Make sure the butter is at room temperature when spreading
Let the cream cheese come up to room temperature to prevent lumps.
