AIR FRYER - BABA GANOUSH

The Haverfoodfest was a triumph this year. So much so that many food stalls sold out before I could get to them! One of our favourite cuisines is Middle Eastern and I was disappointed not to get a fix. 

Therefore, I decided to experiment with the air fryer again and make my own Baba Ganoush. This super healthy and easy smoky aubergine dip is perfect with flatbreads or pitta or to serve with other Middle Eastern dishes as part of a mezze.

Whilst the Aubergines cooked really well in the air fryer you can’t beat a smoky BBQ or a quick blast under the grill to get that charcoal flavour.

Ingredients:

· 2/3 medium aubergines · 30ml extra virgin olive oil

· ¼ tsp ground coriander · ¼ tsp ground cumin · 2 tbsp tahini · 1 large lemon - juiced · ½ small bunch parsley – finely chopped

· flatbreads or pitta bread to serve

Method:

Prick the aubergines all over so that they don’t burst in the fryer. Fry at 200c for 20 minutes. They come out shrivelled and soft.

Once cooled scoop out the flesh and mix in all the other ingredients in a bowl or a food processor.

To serve sprinkle with the parsley and a small drizzle of olive oil.
