Robin's Protein Bars
Jill's professional athlete son Robin is sharing with us his protein bar recipe - super easy, delicious and packed with those important nutrients to help you recover after a high intensity workout! Enjoy!
Ingredients -
1 1/2 cups peanut butter
1/3 cup honey
1/4 cup ground flax seed or mixed seeds
1 1/4 cups rolled oats, slightly ground (oat flour works too)
*1/2 cup vanilla protein powder
pinch salt
1 tsp vanilla extract
1/4 cup mini chocolate chips
*You can also use chocolate protein powder or substitute the powder with ground oats or nuts of your choice
Method -
Line a 8x8 inch tin with parchment paper and set it aside.
In a medium bowl, add all the ingredients except the chocolate chips. Stir and mix ingredients until combined. The mixture should resemble cookie dough.
Fold in the chocolate chips.
Using your hands, press the mixture into the prepared tin.
Place in the refrigerator to chill for 20 minutes to make cutting easier. You can speed up this process by placing the bars in the freezer for 10 minutes.
Once the bars are chilled and hold their form, use the parchment paper to lift the bars out of the pan. Evenly cut into 10 bars. Enjoy!
