Milk Chocolate Cake
Ingredients:
200g Self Raising flour
225g Caster sugar
25g cocoa powder, sieved
100g margarine
2 medium eggs
75ml evaporated milk
75ml cold water
few drops of vanilla essence
pinch of salt
Method:
Heat oven 180c 150fan 350f, gas 4… grease and line 2 tins, not loose bottomed – 7inch 18cms.
Mix flour, sugar, cocoa and salt
Rub in the margarine
Stir in the milk, eggs, water and essence into the dry ingredients and beat well
Place mixture into prepared tins and bake for approx 30-35 minutes
When cold sandwich and top with the milk chocolate icing
Icing:
60g Margarine
1 tablespoon cocoa powder
250g icing sugar, sieved
3 tablespoons of hot milk – I use the remaining evaporated milk
1 tsp vanilla essence
Melt margarine, blend in the cocoa powder then stir in the icing sugar, milk and essence
Beat until smooth

To make Roxie’s birthday cake I doubled this recipe.
I bought pink icing – saves messing about with colouring white icing – the Jane Asher blocks are very good colours.
I decorated using a cake topper and decorations bought from Amazon – just go for it as you wish!
