Date and Orange Slices
This food combining recipe is absolutely delicious!
A perfect treat if you are a follower of this way of eating but even if you are not – go for it! Rosita is baking these for the Preseli Pirates Cycle Club 50-mile raid – a wonderful pit stop energy boost!
Super easy very nutritious and just look at that date puree running through the middle! Yummy! You can add other ingredients like desiccated coconut or chocolate to ring the changes, but it is delicious as it is! – ENJOY!
Makes 12
Ingredients:
225g dates – stoned and pitted
Grated rind of one orange
125g wholemeal flour
25g sesame seeds
75g butter
1 tbsp malt extract
2 tbsp honey or maple syrup
10g sunflower seeds
Method:
Grease and line a 2-pint loaf tin
Boil the dates for approx.10 minutes until soft in a small amount of water until mushy and soft. Leave to cool then stir in the orange rind.
Mix the oats, flour and sesame seeds in a large bowl.
Melt the butter, extract and honey in a microwave or over a pan of boiling water until melted together then add to the dry ingredients and mix thoroughly.
Press half of the mixture into the tin then layer the date puree on top.
Add the sunflower seeds to the remaining mixture then sprinkle over the dates and press down firmly.
Bake in an oven 170fan or equivalent for 15-20 minutes until firm and browned.
Cut into 12 bars and eat cold for a snack or warm with ice cream for a dessert.
