Jill's Recipe: Rob Glenns Bara Brith
How pleased I was when Rob Glenn – cover presenter – stepped into Lawrie’s Lifestyle Show in my absence. He certainly stepped up to the brief by providing our listeners with not one but two-family recipes. My favourite was his grannies Bara Brith which has been passed down through the family and is super easy to make as the weighing method is cups. There is a secret ingredient which is not longer secret…can you guess what it is?
Ingredients:
1 cup each of Raisins, sultanas and currants
1 cup brown sugar
2 cups self raising flour
1 cup strong tea
2 teaspoons mixed spices
1 tablespoon of marmalade – the secret ingredient!
Method:
Mix the dried fruit and sugar together, pour in the tea and leave to soak for as long as you can – overnight if you have time!
Mix in the remaining ingredients then pour into a greased and lined loaf tin and bake for approximately 1 -11/2 hours oven 160 fan gas 4 or equivalent
About 10 mins before its baked remove from the oven and sprinkle with a little bit of brown sugar and spice and pop back in …its done when the top is crusty and the inside when tested with a skewer comes out clean.
Will keep for a week in a tin….enjoy it a few days in with some butter or …dare I say it’s delicious with cheese.
