Jill's Recipe: Vegan Bonfire Parkin
With Guy Fawkes night just around the corner my Bonfire Parkin is the perfect winter explosion!
Ingredients
· 100g roughly ground porridge oats (or medium oatmeal)
· 250g Self raising flour
· 1 tbsp ground ginger
· 1 tsp mixed spice
· Good pinch of salt
· 200g dark brown soft sugar (or dark muscovado sugar)
· 130g vegan block butter or margarine
· 18 g golden syrup
· 100g black treacle (or molasses)
· 160ml unsweetened non-dairy milk (soy works best)
Method:
Preheat your oven to 180°C / 160°C fan/ Gas Mark 4. Grease a 23 cm (9-inch) square cake tin and line it with baking parchment.
In a large mixing bowl, whisk together the oatmeal, flour, ground ginger, mixed spice, and salt.
In a saucepan over a low heat, gently melt together the dark brown sugar, vegan butter, golden syrup, and black treacle. Stir often until smooth, making sure not to let the mixture boil.
Pour the melted syrup mixture into the bowl of dry ingredients. Pour the non-dairy milk into the warm saucepan (to pick up any leftover syrup) and give it a quick stir, then pour that into the bowl as well.
Stir everything together thoroughly until no dry lumps remain.
Pour the batter into your prepared tin and smooth the top. Bake for about 30 minutes or until firm to the touch and a skewer inserted into the centre comes out clean.
Leave the parkin to cool completely in the tin, then cut into squares. Tip: Parkin tastes even better (and gets stickier) if you wrap it up and store it in an airtight container for a few days before eating.
